Tzatziki

This is easy to make a can be served with vegetables or pita slices:

  • 2 c plain yogurt
    1 english cucumber
    2 garlic cloves, crushed
    2 tsp mint
    1-2 Tbs olive oil

Peel and grate cucumber. Squeeze excess moisture and drain well. Blend with yogurt, garlic and mint. Slowly blend in olive oil, a little at a time (as much as it will take) to make a thick & creamy mixture.
