Tiramisu

This recipe is from Allison Vardy (adapted from the Salerno container). She makes it at her annual Turkathon and there are never any left-overs (however, it does taste even better the next day, when all the flavours have had time to seep into the lady fingers):

  • 500g Mascarpone
  • 1-½ c espresso or strong coffee
  • 6 eggs
  • 6 Tbs sugar
  • 2 packages of Lady Fingers
  • 1 oz liqueur (Kalhua is good)
  1. Separate the yolks from whites. Beat egg yolks with sugar until creamy. Add cheese and liqueur.
  2. In a separate bowl, beat egg white until firm and fluffy. Fold into cheese mixture.
  3. Dip fingers in coffee. Layer on the bottom of a 9×13″ pan and cover with cheese mixture. Repeat layers. Sprinkle with cocoa.
  4. Refrigerate before serving. May also be frozen.
