Sweetened Shepherd’s Pie

This is a bit of a twist on the standard pub fare:

  • 3 medium sweet potatoes, peeled and cubed
  • ½ c water
  • 1 Tbs butter
  • 1 med onion, chopped
  • 1 clove garlic, minced
  • 1 lb ground beef, lean
  • ¼ c flour
  • 1½ c milk
  • 1 beef bouillon cube
  • ½ tsp dry thyme
  • 1 tsp chili powder
  • 1 c peppers, chopped
  • 1 c corn
  • 1 egg
  • 2 Tbs green onion tops, sliced

This is a multi-step process that will take about 20 min to prep:

  1. Preheat oven to 375F.
  2. Microwave sweet potato on high with ¼ c water for 10-12 min. Drain
  3. Scramble fry beef, drain. Saute onion and garlic
  4. Sprinkle flour over meat. Add water, 1 c milk, bouillon and spices. Stir well
  5. Mix in veggies, stir. Cook 2-3 min. Spoon into 10c dish.
  6. Mash sweet potato with ½ c milk and pinch of salt. Add egg. Beat until smooth. Add more milk if necessary to get a whipped consistency
  7. Stir in onion tops. Spoon over beef. Bake 20 min. Let stand 5 min. Serve

Steve is really not a fan of sweet potato so I mix the topping half-half with golden flesh potaotes.
