This was sent to me from my realtor, Laura Brown. She works with her daughter Kristina Kritikos at Century 21 Affinity in Burlington.

  1. Buy a big loin and chop it into medallions. Soak them in olive oil, salt, pepper, 4 lemons, 4 limes (the juice).
  2. Fry up the medallions until brown and add the remaining liquid into the frying pan for a minute or less
  3. Put into a bowl and serve with a salad of chopped tomatoes, feta cheese, cucumber, onions, olive oil, salt, pepper, lemon & oregano and olives if you want.

    Strong citrus on the tongue – might switch to 1:1 of juice (I used 2:2 for this recipe, fresh). Also, make sure the sizes are uniform so all the pieces are done at the same time. Took about 15min total to cook through but some people prefer it more raw in the middle.
