Potato Shack

  • 4 yellow flesh Potatoes, diced (I leave the peel on)
  • ½red or green pepper
  • ½ cacciatore sausage, thinly sliced (mild or hot depending on your taste)
  • 5 mushrooms, quartered
  • 2 garlic cloves, minced
  • 4 tomatoes, diced (or 1 can of PC no salt added)
  • 1 Tbs Worchestershire sauce
  • bunch of fresh basil

This recipe is remensicent of my life as a teenager eating at the Potato Shack in Del Mar, CA. I made this often in my bachelorette days!

  1. Par boil the potatoes in unsalted water with some basil leaves (about 10 min). Rinse and drain.
  2. Heat 1 Tbs olive oil. Add potatoes and saute about 8-10 min to dry them out, stirring frequently to prevent sticking.
  3. Add the sausage, garlic and peppers. Cook another 3-5 min, still stirring.
  4. Add the mushrooms, Worchestershire sauce, more basil (2 tsp of dried if you don’t have fresh) and tomatoes. The potato stuck to the bottom will form a delicious starchy paste with the liquid if you scrap it up!

I got 5 lunches out of this, each one around 200 Calories (full nutritional info »).
