Low Calorie Raisin-Bran Muffins

February is Heart Health Month (good cross-marketing with Valentine’s Day) so I would be remiss without adding something extremely healthy before this month is through.

If you’re a baker like me, you probably have all this at home already (but double check before you get started. Nothing worse than being ~½c short of flour once you’ve started. Yes it happened to me and I pouted until Steve rescued me – he’s so kind):

  • 1 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups cooking bran
  • 1 ¼ cups skim milk
  • ½ cup molasses
  • 1 egg
  • raisins ( I just throw a good couple of handfuls in)

You know the drill:

  1. Mix dry ingredients
  2. Beat together milk, eggs and molasses
  3. Add together with the raisins and mix lightly
  4. Spray muffin tins with cooking spray and bake at 350 F until done, approx 20 minutes

Idea from the author, Marianne in Stoney Creek: I quadruple the recipe and freeze them. Great for lunches.

    I made them today and used 1/3 c molasses then topped the remainder up with milk to make 1/2 c, plus the required milk. They’re a little runny so I left them in for 25 min but the molasses taste isn’t as strong.

    On a side note, this recipe makes 1.5 Tbs per cup (makes 12).
