Greek Lentil Soup

This flavour is plain but great in the late summer when the heat is stifling and your appetite is low:

  • 1 each: carrot and onion, diced
  • 1 leek, chopped
  • 2 cups sweetcorn
  • 2 cups chopped tomato
  • 1 Tbs olive oil
  • 2½ dry lentils
  • 8 cups vegetable broth
  • 2-3 garlic cloves, minced
  • ½ cup balsamic vinegar
  1. Saute vegetables in oil. Add corn and tomatoes, cook 5 min on low heat.
  2. Add lentils and broth. Add garlic and simmer on low heat for 45 min, stirring ocassionally.
  3. Season before serving with chopped parsley.
