Hummus

This is my favourite recipe. Great snack on pita, with vegetables, or on a cracker:

  • 2 tsp cumin
  • garlic cloves (2 fresh, or 4 roasted, or 1 tsp powder)
  • can of chickpeas, drained
  • 2 Tbs lemon juice
  • 2 Tbs tahini, or plain yogurt
  • roasted red peppers, drained and chopped (optional)

Place all ingredients in processor until smooth. It makes 1½ cups.

    I made it today with soaked/boiled chick peas and my pickled roasted peppers – odd taste that’s sweet. Can’t tell if its from the lemon juice (I used 2 tsp and 1 cup of dry chickpeas) or the pickling juice … interesting and not bad.
