Gingerbread Cookies

Don’t wait for Christmas … although I am. We’re decorating cookies on Christmas Eve this year – makes you feel like a kid again:

  • 1 cup butter, softened
  • 1-½ cups sugar
  • ¼ cup egg substitute
  • 1-½ Tbs orange zest
  • 2 Tbs dark corn syrup or molasses
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cloves
  • ½ tsp salt

DIRECTIONS

  1. Preheat the oven to 375 F. Grease cookie sheets.
  2. Cream the butter and the sugar together. Add the egg and mix well. Mix in the orange peel and dark corn syrup.
  3. Add the flour, baking soda, cinnamon, ginger, ground cloves and salt, mixing until well combined. Chill dough overnight.
  4. Roll dough out to ¼” thick and cut into desired shapes. Place cookies 1 inch apart on the prepared pan. Bake for 10 to 12 minutes.
