Gingerbread Cake

This classic cake is ideal and brings back memories of sitting at Meaghan’s table with a cup of tea.

  • 2 1/3 c flour
  • 1/3 c sugar
  • 1 c molasses
  • ¾c hot water
  • ½c shortening (margarine)
  • 1 egg
  • 1 tsp each: baking soda, ginger, cinnamon
  • ¾ tsp salt

Beat all ingredients together for 3 min on medium speed. Pour into 8×8″ pan (greased & floured). Bake 50 min at 325F or until a toothpick comes out clean.
