GGs Carrot Cake

This cake is beyond delicious … although I’m hoping Karin will share her family recipe too.

  • 2 c sugar
  • 2 c flour
  • 3 c finely shredded carrots
  • 2 tsp cinnamon
  • pinch of salt
  • 2 tsp baking soda
  • 1¼ c vegetable oil
  • 4 eggs
  • 2 tsp vanilla

Mix dry ingredients together. Blend in oil. Add eggs and carrots then vanilla. Blend well. Bake in a pan at 350F for 1 to 1¼ hours.

Icing:

  • 8 oz creamcheese (1 package)
  • ¼ c butter
  • 4 c icing sugar
  • 1 tsp vanilla
  • 2 tsp orange juice OR milk

Blend well and cover over the cake.

It’s so delicious and I always eat too much of it in one sitting and then I feel sick … yet it always seems worth at the time it because it’s just so yummy!!! Funny enough, my “going-away” cake at the CPDC was carrot. The whole thing was unexpected! Kath picked it up from Costco so there were lots of extras – I brought home some for Steve »

    Got raving reviews from Steve’s family, including Laurie who doesn’t like carrot cake. I left out the OJ from the icing because it was already a good consistency. I also subbed 3/4 cup oil for apple sauce and baked it for 70 min. I came out perfect!!!!!
