Coconut Sticky Rice with Mango

I love this stuff so much that I admit to hunting for it after a long night of clubbing (thank you Dana):

  • 2c basmati or jasmine rice
  • 14 oz can coconut milk (light)
  • ½ c brown sugar
  • ¼ tsp salt
  • 1 mango, diced (you can buy them frozen)

Soak the rice overnight and drain. Substitute half the water with coconut milk, add ¼ c sugar and pinch of salt. Cook rice per normal directions.

Sauce: add the remaining coconut milk, sugar and remaining salt. Simmer until syrupy. Combine rice and half the sauce. Top with mango pieces and remaining sauce.

Sadly, 1 serving is only 1/3 cup. This makes 6 servings  (214 calories with 8.7g fat, 33.6g carbs and 2.6g protein).
