Chocolate truffle recipe

In honour of my sister’s birthday, and her darling newborn - I just had to post a chocolate recipe today :)

  • 3 Tbsp fat free cream cheese
  • 2 Tbsp cocoa, divided
  • 2 pkts sweetener (or 4 tsp of sugar)
  • 1 tsp extract (rum, orange, maple, almond extract, or ½ tsp peppermint since it’s very strong)
  1. Combine all except 1 Tbsp cocoa and mix well until blended.
  2. Refrigerate for 15 minutes.
  3. Roll mixture into small balls (makes approx 6)
  4. Roll in remaining cocoa powder

    Made them today using PC Low-fat cream cheese. A double batch is ~1/3 of the brick (mixed with 2 Tbs cocoa and a bit of melted chocolate). I made peppermint, almond and milk (I used 2 tsp milk plus 2 tsp of milk powder). The first I rolled in green sugar, the almonds in red and the milk in cocoa. I want to try rum next time! Made all three batches in about 40 minutes - including mixing, chilling, rolling and putting in cute paper cups.
