Baked Oatmeal

I have porridge for breakfast during the week. I mix it with ground flax and water, then pour almond milk over top. Kerry mentioned that she was going to experiment with baked oatmeal, which I hadn’t considered before. What a time saver! Plus it has eggs, so my daily protein will increase:

Baked oatmeal in a 9" square pan

  • 1 tsp cinnamon
  • ¼ tsp nutmeg, cloves and all spice
  • 3 cups rolled oats
  • 2 tsp baking powder
  • 1½ cups liquid (milk, water, almond, soy, rice, etc)
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1 cup fruit with a tsp of brown sugar (optional)
  1. Spray a 9 x 13 pan with nonstick spray.
  2. Whisk together the liquids in a medium bowl. In a large bowl, stir together dry ingrediants. Fold wet into dry. Let stand for 15 minutes while you preheat the oven to 350F.
  3. Pour into prepared pan. Bake 40 minutes. Serves 6.

    Trying it again with 2 tsp of Pie Spice, 1/4 cup raisins plus 1/2 cup cooked apple (chopped) and no sugar with 1 cup of almond milk in an 8×8″ pan. I also substituted 1/2 cup of oatmeal for flour to give it more of a muffin texture.
