Apple Bake with Quinoa

Long story short, I ended up on a path that lead me from SparkRecipes to Daisy’s food journal on Twitter to GreenLiteBites and I found an experimental breakfast she had tried with quinoa. Being a Saturday, I thought I would be adventurous. I’m eating it while I type this and it’s not too bad:

  • 1 apple, cored and cubed (leave the skin on)
  • 1 tsp lemon juice
  • ½ tsp ground cinnamon
  • ½ cup water
  • ¼ cup uncooked quinoa
  1. Purée the apple in a food processor with the lemon, cinnamon and ¼c water. Add to a small pot with the remaining water
  2. Rinse and pick over your quinoa, add it to the pot and bring to a boil, stirring frequently.
  3. Simmer 15-20 min, or until the quinoa is done (it bursts and you will see thin little white rings). Remember to stir occassionally
  4. If it’s not sweet enough for you, stir in 2 tsp of honey

So here’s why it’s good for you: 1 serving (this recipe is for one) has 258.6 Cal. 

  • Total Fat: 5.4 g
  • Total Carbs: 76.0 g / Dietary Fiber: 10.1 g
  • Protein: 10.6 g

I’ve modified Roni’s recipe to make it a little less cinnamon-tasting and I didn’t add any honey. It would probably taste better with whole oats (same recipe, sub quinoa for ¼c oats. Microwave on med for 2 min to cook) but then you don’t get the same protein benefit:

  • Total calories: 163.1
  • Total Fat: 2.1 g
  • Total Carbs: 36.6 g / Dietary Fiber: 7.0 g
  • Protein: 2.9 g
